Fried calzoni are a classic of Sicilian rotisserie, a piece that has its roots in Palermo, the Sicilian capital, home of street food.
It is so famous that it competes for the podium with its more famous cousins, Le arancine!
The dough for fried calzoni is a very simple and very versatile dough to prepare.
The original recipe calls for slow leavening which guarantees greater softness.
To begin with, we wanted to focus our attention on 4 main flavors which are among the most loved and requested, but other appetizing flavors will surely be added.
Among the classic flavors there is the one with tomato and mozzarella, which represents the simplicity and intense goodness that the union between stringy mozzarella and fresh tomato can give at every bite;
Among the most requested flavors there is the one with ham and mozzarella, enclosed in a soft leavened dough with a juicy and stringy filling of mozzarella and cooked ham inside;
For lovers of traditional, unique and unmistakable flavours, there is the Norma flavour, which gives the sensation of feeling at home and fully represents goodness and tradition.
For lovers of strong and decisive flavours, there is also a slightly spicy version which, with that touch of chilli combined with stringy mozzarella, gives an unmistakable flavour.
